This delicious Lao coconut curry is the perfect meal for a quick and easy dinner. It is made with a combination of fresh vegetables and spices, cooked in a creamy coconut milk sauce. The curry is full of flavour and will leave you wanting more!
Chop the onion and mince the ginger and garlic.
Heat a large pot over medium heat and add the onion, ginger, garlic, curry powder, cumin and coriander powder.
Stir until fragrant and add the tamarind paste, vegetables, coconut milk and water.
Bring to a boil and reduce heat to low and let simmer for 30 minutes.
