Heat 2 tablespoons of oil in a pan over medium heat. Once the oil is hot, add 1 teaspoon of cumin seeds and let them sizzle for few seconds.
Add the chopped onion and sauté until golden brown. Add 2 tablespoons of ginger-garlic paste and sauté for few minutes.
Add 1 teaspoon of ground coriander, 1 teaspoon of turmeric powder, and 1 teaspoon of red chili powder. Stir and cook for few minutes.
Add the chopped tomatoes and vegetables and stir for few minutes. Add 1 cup of water and 1 teaspoon of salt and bring to a boil.
Reduce the heat to low, cover the pan and simmer for about 25-30 minutes until the vegetables are cooked and the sauce is thick.
Garnish with fresh cilantro and serve hot with rice or roti.
