Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves and salt.
In the bowl of a stand mixer, beat the butter and sugar on medium speed until light and fluffy, about 2 minutes. Beat in the egg, followed by the molasses.
With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.
On a lightly floured surface, roll out the dough to a 1/4-inch thickness. Use cookie cutters to cut out shapes, then transfer the cookies to the prepared baking sheet.
Bake for 10 minutes, or until the edges of the cookies are firm. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
