Cut the chicken into cubes and set aside.
Chop the onion and garlic and set aside.
Mix the curry powder, ginger, cumin, and cayenne pepper together in a small bowl and set aside.
Heat a large pan over medium heat. Add a tablespoon of oil and saute the onion and garlic until they are softened and lightly browned.
Add the chicken and the spices and cook for 5 minutes, stirring occasionally.
