Rinse the lentils and rice. Cook them separately until tender.
Cook the pasta according to package instructions.
In a saucepan, heat the oil and add the chopped onions. Cook until they are caramelized.
Add the garlic, cumin, coriander, and chili flakes to the onions. Stir well.
Add the tomato sauce and vinegar. Simmer for 10 minutes.
In a serving bowl, layer the rice, lentils, and pasta. Pour the tomato sauce over the top and garnish with the fried onions.
