Chop the vegetables and sauté in a pan with olive oil
Add the couscous, spices and salt and mix everything together
Add 1 cup of boiling water and cover the pan with a lid
Let it cook for about 20 minutes

Chop the carrots, onions and tomatoes into small cubes
Put a pan on the stove over medium heat and add the olive oil
Add the chopped vegetables and sauté until they are soft and lightly browned
Add the couscous, cumin, salt and pepper and mix everything together
Add 1 cup of boiling water and stir everything together
Cover the pan with a lid and let it cook for about 20 minutes
When the couscous is cooked, turn off the heat and let it sit for 5 minutes before serving
