Add the turmeric, cumin, coriander, ginger, cardamom, cinnamon, black pepper, and cayenne pepper and cook for 1 minute.
Add the coconut milk, water, and salt and bring to a boil.
Reduce heat to low and simmer for 25 minutes.
Stir in the cilantro and cook for 5 minutes.

Heat 2 tablespoons of vegetable oil in a large saucepan over medium heat.
Once the oil is hot, add 1 teaspoon of mustard seeds and 1 teaspoon of cumin seeds and cook until they begin to pop.
Add 2 cloves of minced garlic and cook for 1 minute.
Add 1 teaspoon of ground turmeric, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of ground ginger, 1 teaspoon of ground cardamom, 1 teaspoon of ground cinnamon, 1 teaspoon of ground black pepper, and 1 teaspoon of cayenne pepper and cook for 1 minute.
Add 2 cups of coconut milk, 1 cup of water, and 1 teaspoon of salt and bring to a boil.
