Heat the oil in a large pot over medium heat.
Add the onions, garlic, carrots, potatoes, and mushrooms and cook for 5 minutes.
Add the curry powder, garlic powder, ginger powder, onion powder, cumin powder, turmeric powder, and cayenne pepper and cook for an additional 5 minutes.
Pour in the vegetable stock and bring to a boil.
Add the green beans, cauliflower, peas, tomatoes, and coconut milk and simmer for 30 minutes.
Stir in the fresh coriander and serve with jasmine rice.
