Add chicken and curry powder.
Add coconut milk and simmer.

Cut the chicken into bite-sized pieces and set aside.
Finely chop the onion, mince the garlic, and slice the bell pepper into thin strips.
Heat oil in a large pan over medium heat. Add the onion and garlic, sautéing until they turn golden brown.
Add the chicken to the pan, along with the curry powder. Stir well to coat the chicken in the curry powder.
Pour in the coconut milk and bring the mixture to a simmer. Let it cook for about 20 minutes, until the chicken is cooked through.
Finally, add the sliced bell pepper and the fish sauce. Stir well and let the curry cook for another 10 minutes.
