Add onion, celery, carrots, potatoes, tomatoes, oregano, basil, cumin, pepper and salt. Cook for 5 minutes.
Pour in beef broth and bring to a boil. Reduce heat and simmer for 2 hours.

Heat 2 tablespoons of oil in a large pot over medium heat.
Add 2 lbs of beef and cook for 5 minutes, stirring occasionally.
Add 1 cup of chopped onion, 1 cup of chopped celery, 1 cup of chopped carrots, 1 cup of chopped potatoes, 1 cup of chopped tomatoes, 1 tablespoon of dried oregano, 1 tablespoon of dried basil, 1 teaspoon of ground cumin, 1 teaspoon of ground black pepper and 1 teaspoon of salt. Cook for 5 minutes, stirring occasionally.
Pour in 2 cups of beef broth and bring to a boil. Reduce heat and simmer for 2 hours, stirring occasionally.
