Add 3 cups of diced potatoes, 1 cup of diced carrots, 1 cup of diced celery, 1 cup of sliced mushrooms, 1 tablespoon of tomato paste, 2 cups of beef broth, 1 cup of diced tomatoes, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, 1 teaspoon of dried parsley, and 1/2 teaspoon of black pepper. Simmer for 1 hour, stirring occasionally.
Add 1 pound of beef stew meat and simmer for an additional hour, stirring occasionally.
