Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
Add 1 cup of chopped onion, 1 cup of chopped bell pepper, 1 cup of chopped carrots, and 1 cup of chopped mushrooms. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
