Heat oil in a pan and add cumin, coriander and mustard seeds.
Add garlic and ginger paste and sauté for a few minutes.
Add turmeric powder and mix well.
Add chopped tomatoes and vegetables and cook for 10 minutes.
Add coconut milk and salt and cook for 20 minutes.

Heat 2 tablespoons of oil in a pan over medium heat.
Once the oil is hot, add 2 tablespoons of cumin, 1 tablespoon of coriander and 1 tablespoon of mustard seeds. Sauté for a few minutes until the seeds start to crackle.
Add 1 tablespoon of garlic paste and 1 tablespoon of ginger paste and sauté for a few minutes.
Add 1 tablespoon of turmeric powder and mix well.
Add 2 cups of chopped tomatoes and 2 cups of chopped vegetables and cook for 10 minutes.
Add 1 cup of coconut milk and 1 teaspoon of salt and cook for 20 minutes.
Serve hot with steamed rice or roti.
