Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat.
Add 2 tablespoons of cumin seeds and 3 cloves of garlic. Cook for 1 minute.
Add 2 pounds of chicken thighs and cook until lightly brown, about 5 minutes.
Add 2 teaspoons of coriander powder, 2 teaspoons of cumin powder, 2 teaspoons of curry powder, 1 teaspoon of turmeric powder, and 1 teaspoon of salt. Stir to combine and cook for another 5 minutes.
Add 1 cup of water and bring to a boil. Reduce heat to low and simmer for 30 minutes.
Serve with steamed white rice, roti, or naan.
