In a medium bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, oregano, and thyme until well combined.
In a separate bowl, mix together the buttermilk and chicken pieces until the chicken is completely coated.
In a third bowl, mix together the flour, cornstarch, and oil until the mixture is thick and pasty.
Dip the chicken pieces in the buttermilk mixture, then in the flour mixture, making sure to coat the chicken pieces completely.
Heat the oil in a large skillet over medium-high heat. Fry the chicken pieces in the skillet until they are golden brown and cooked through. This should take about 10 minutes per side.
Once the chicken is cooked through, drain the chicken on a paper towel-lined plate.
