In a bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, oregano, and thyme.
In a separate bowl, mix together the buttermilk and chicken pieces.
In a third bowl, mix together the flour, cornstarch, and oil.
Dip the chicken pieces in the buttermilk mixture, then in the flour mixture.
Fry the chicken pieces in a large skillet over medium-high heat until golden brown and cooked through.
Drain the chicken on a paper towel-lined plate.
