This traditional Solomon Island fish curry is made with coconut milk and a variety of spices to bring out the unique flavour of the region. It is a simple dish that can be enjoyed by all.
Mix the curry powder, ginger powder, garlic powder, cayenne pepper, salt and sugar in a bowl.
Heat the oil in a large skillet over medium-high heat.
Add the onion, bell pepper and tomatoes and cook for 5 minutes.
Add the fish and cook for 10 minutes.
Add the coconut milk and stir to combine.
Simmer for 5 minutes until the fish is cooked through.
