Add cod fillets and cook for 5 minutes.
Add wine and fish stock and bring to a boil.
Reduce heat and simmer for 30 minutes.
Add tomatoes and parsley and cook for an additional 5 minutes.

Heat 2 tablespoons of olive oil in a large pot over medium heat.
Once the oil is hot, add 1 cup of chopped onion, 1 cup of chopped celery, and 1 cup of chopped carrots. Cook until the vegetables are softened, about 10 minutes.
Add 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of ground paprika, 1 teaspoon of ground black pepper, and 1 teaspoon of salt. Cook for 1 minute.
Add 1 pound of cod fillets and cook for 5 minutes.
Add 1 cup of dry white wine and 2 cups of fish stock and bring to a boil.
Reduce heat and simmer for 30 minutes.
Add 2 cups of chopped tomatoes and 1 cup of chopped parsley and cook for an additional 5 minutes.
