Add the ground coriander, cumin and turmeric and cook for an additional minute.
Add the basmati rice and chicken stock and bring to a boil.
Reduce the heat to low, cover and simmer for 25 minutes.
Add the frozen peas, dried apricots, cashews, cilantro, mint and parsley and stir to combine.
Cover and cook for an additional 10 minutes.
Remove from the heat and stir in the lemon juice and butter.
