Preheat oven to 400°F.
Cut potatoes in half lengthwise.
Scoop out the inside leaving a thin layer of potato.
Brush both sides of potatoes with butter and sprinkle with salt.
Bake face down 30 minutes.
Flip potatoes over, bake an additional 10 minutes.
Fill with cheese and bacon, bake an additional 2 minutes or until cheese is melted.
Top with sour cream and chives.

Preheat your oven to 400°F.
Slice your potatoes in half lengthwise.
With a spoon or melon baller, scoop out the inside of the potato leaving a thin layer of potato against the skin.
Brush both sides of the potatoes with melted butter and sprinkle with salt.
Place potatoes face down on a baking sheet and bake for 30 minutes.
Flip the potatoes over and bake for an additional 10 minutes.
Fill each potato with cheese and bacon, then bake for an additional 2 minutes, or until the cheese is melted and bubbly.
Remove from oven and top with sour cream and chopped chives before serving.
