This Kenyan Coconut Curry is a delicious, easy to make dish with a hint of spice. It is made from a combination of coconut milk, curry powder, garlic, onion, tomato, and a few other ingredients. The result is a flavorful, creamy, and comforting dish that is sure to please.
Chop vegetables and set aside.
In a medium saucepan, heat oil over medium heat. Add garlic and onion and cook, stirring often, for 5 minutes.
Add curry powder, cayenne pepper, coriander, cumin, and salt and pepper. Stir and cook for another minute.
Add tomato and cook for 3 minutes.
Add coconut milk, green beans, carrots, and potatoes. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
