Add cumin, turmeric, coriander, and cayenne pepper and cook for 1 minute.
Add carrots, potatoes, celery, mushrooms, tomatoes, and vegetable broth and bring to a boil.
Reduce heat to low and simmer for 30 minutes.
Stir in parsley and cilantro and season to taste with salt and pepper.

Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add 1 cup of chopped onion and 2 cloves of minced garlic and cook for 5 minutes, stirring occasionally.
Add 2 teaspoons of ground cumin, 1 teaspoon of turmeric, 1/2 teaspoon of ground coriander, and 1/4 teaspoon of cayenne pepper and cook for 1 minute, stirring constantly.
Add 1 cup of chopped carrots, 2 cups of chopped potatoes, 2 cups of chopped celery, 1 cup of chopped mushrooms, 1 cup of diced tomatoes, and 2 cups of vegetable broth and bring to a boil.
Reduce heat to low and simmer for 30 minutes, stirring occasionally.
Stir in 1/2 cup of chopped parsley and 1/4 cup of chopped cilantro and season to taste with salt and pepper.
Serve hot.
