Add the onion, bell pepper, carrots, celery, tomatoes, potatoes, cabbage, green beans, spinach, and mushrooms and cook for 10 minutes.
Add the rice and 2 cups of water and bring to a boil.
Reduce the heat to low and cover the pot. Simmer for 30 minutes or until the rice is cooked.
