In a large bowl, mix together 3 cups of all-purpose flour, 1 cup of cold butter, 1/2 cup of granulated sugar, and 1/2 teaspoon of salt. Use a pastry blender or two knives to mix the ingredients together until the mixture resembles coarse crumbs.
Add 1/2 cup of cold water and mix until dough forms. Divide the dough in half and roll out one half on a lightly floured surface.
Grease a 9-inch pie dish and place the rolled out dough in the dish. Crimp the edges of the dough and set aside.
In a separate bowl, mix together 4 cups of sliced apples, 1/4 cup of granulated sugar, 1/2 teaspoon of ground cinnamon, and 2 tablespoons of lemon juice.
Pour the apple mixture into the pie dish and spread evenly. Roll out the remaining dough and place on top of the apple mixture. Crimp the edges of the dough together.
Bake at 375°F for 40 minutes or until the top is golden brown.
