In a medium saucepan, bring quinoa and water to a boil. Reduce heat to low, cover and simmer until quinoa is tender and water has been absorbed, about 15-20 minutes
While the quinoa is cooking, halve your tomatoes and cube your mozzarella
Once the quinoa is done, let it cool for a few minutes. Then, in a large bowl, combine the cooked quinoa, halved tomatoes, cubed mozzarella, and chopped basil leaves
To make the dressing, in a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper until well combined
Pour the dressing over the salad and gently toss to combine everything. Serve immediately or refrigerate until ready to serve
