Heat the vegetable oil in a large pot over medium-high heat.
Add the beef stew meat and cook until browned.
Add the onion, carrots, celery, garlic, cumin, coriander, ginger, paprika, salt, and pepper and cook for 5 minutes.
Add the beef broth, tomatoes, and parsley and bring to a boil.
Reduce heat to low and simmer for 2 hours, stirring occasionally.
