Heat oil in a large saucepan over medium heat.
Add onion, bell peppers, tomatoes, potatoes, carrots and ginger-garlic paste. Cook for 5 minutes, stirring occasionally.
Add cardamom, cumin, turmeric, coriander, salt and pepper. Cook for another 5 minutes.
Add lemon juice and cook for 10 minutes, stirring occasionally.

Heat 2 tablespoons of oil in a large saucepan over medium heat.
Add 1 cup of chopped onion, 1 cup of chopped red bell pepper, 1 cup of chopped green bell pepper, 1 cup of chopped tomatoes, 1 cup of chopped potatoes and 1 cup of chopped carrots. Cook for 5 minutes, stirring occasionally.
Add 1 teaspoon of ground cardamom, 1 teaspoon of ground cumin, 1 teaspoon of ground turmeric, 1 teaspoon of ground coriander, 1 teaspoon of salt and 1/4 teaspoon of ground black pepper. Cook for another 5 minutes.
Add 2 tablespoons of lemon juice and cook for 10 minutes, stirring occasionally.
Serve hot with steamed rice.
