Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
Add 1 chopped onion and cook until softened, about 5 minutes.
Add 2 cloves of garlic, 1 tablespoon of ginger paste, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of ground turmeric, 1 teaspoon of ground cinnamon, 1 teaspoon of ground cardamom, 1 teaspoon of ground cloves, and 1 teaspoon of ground nutmeg and cook for 1 minute.
Add 1 pound of chicken and cook until lightly browned.
Add 1 can of coconut milk, 1 tablespoon of brown sugar, and 1 tablespoon of lemon juice and stir to combine.
Reduce heat to low and simmer for 45 minutes.
Garnish with 1 tablespoon of chopped fresh cilantro.
