Bring 2 cups of sushi rice and 2 cups of water to a boil in a large pot. Turn the heat to low and cook for 15 minutes, stirring occasionally. Turn off the heat and let the rice sit for 10 minutes.
Lay a sheet of nori seaweed on a sushi rolling mat. Make sure the shiny side is facing down.
Spread the cooked sushi rice over the nori seaweed, leaving a 1/2 inch border on the top and bottom of the sheet.
Add the fillings of your choice in a line down the center of the sushi roll. Popular fillings include avocado, cucumber, and cooked shrimp.
Roll the sushi roll with the help of the sushi rolling mat. Start at the bottom and roll it towards the top. Make sure to keep it tight as you roll.
