2 lbs beef stew meat

1 tbsp olive oil

2 cups chopped onion

1 cup chopped carrots

1 cup chopped celery

4 cloves minced garlic

2 tsp dried oregano

2 tsp dried thyme

4 cups beef broth

1 cup dried pearl onions

Heat oil in a large pot over medium-high heat.
Add beef stew meat and cook until browned.
Add onion, carrots, celery, garlic, oregano, thyme, salt and pepper.
Stir in beef broth, pearl onions and tomato paste.
Bring to a boil, reduce heat and simmer for 1 hour.
Mix together flour and 1/2 cup of cold water.
Stir flour mixture into the stew and simmer for another 30 minutes.
Stir in potatoes and simmer for another 30 minutes.
Serve hot.

Add 2 cups chopped onion, 1 cup chopped carrots, 1 cup chopped celery, 4 cloves minced garlic, 2 teaspoons dried oregano, 2 teaspoons dried thyme, 1 teaspoon salt and 1 teaspoon ground black pepper.
