Wash the rice in a bowl of cold water. Drain the water and set aside.
Marinate the chicken with the garlic, ginger, cumin, coriander, turmeric, cinnamon, cardamom, cloves, and nutmeg. Set aside.
Mix the spices together in a small bowl and set aside.
Heat the olive oil in a large pot over medium heat. Add the garlic and ginger and sauté until fragrant.
Add the chicken and spices and sauté until the chicken is cooked through.
Add the rice and water and bring to a boil.
Reduce the heat to low and simmer, covered, for about 1 hour or until the rice is cooked.
