Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add 1 chopped onion, 1 tablespoon of minced garlic, 2 cups of chopped carrots, 2 cups of chopped celery, and 4 cups of cubed potatoes and cook for 5 minutes.
Add 2 pounds of Norwegian Salmon, 1 tablespoon of thyme, 1 teaspoon of paprika, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of salt, and 1/2 teaspoon of pepper and cook for another 5 minutes.
Add 6 cups of vegetable stock and bring to a boil.
Reduce heat to low, cover, and simmer for 25 minutes.
Serve hot.
