First, wash the rice under running water until the water runs clear. Then cook it in boiling water for 10 minutes, drain and set aside.
Marinate the chicken with salt, thyme, curry powder, and cayenne pepper. Let it sit for 10 minutes then cook until browned.
In the same pot, add chopped tomatoes and bell peppers. Cook until they are soft.
Add the cooked rice and chicken to the pot, stir to combine everything. Cover the pot and let it cook on low heat for 20 minutes or until the rice is fully cooked.
