Begin by rinsing 1 cup of short-grain rice under cold water until the water runs clear.
In a large saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes, or until the rice is soft.
Add 1 can of coconut milk and 1 cup of sugar to the rice. Stir well to combine, then let the mixture simmer on low heat for another 20-25 minutes, or until it has a creamy consistency.
While the rice is simmering, peel and dice 1 ripe mango.
Once the rice pudding has reached the desired consistency, remove from heat and stir in 1 teaspoon of vanilla extract and the diced mango. Serve warm.
