In a separate large skillet, heat the butter over medium-high heat. Add the eggplant slices and cook for about 5 minutes, stirring occasionally. Remove from heat and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk until combined. Slowly add the milk and whisk until the mixture is thick and creamy. Remove from heat and stir in the parmesan cheese.
