In a large bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
Stir in oil, salt, and 4 cups flour into the yeast mixture. Beat until smooth.
Knead dough on a lightly floured surface until smooth and elastic.
Let dough rise in a warm place until doubled in volume.
Preheat oven to 450 degrees F (230 degrees C).
Roll dough into 12 inch long strips and tie each strip into a knot, tucking in the ends.
Place knots 2 inches apart on a baking sheet lined with parchment paper.
Bake in preheated oven until golden brown.
In a small bowl, mix melted butter, garlic and parsley.
