Add 1 cup of chopped onion, 1 cup of chopped carrots, 1 cup of chopped celery, 1 cup of chopped tomatoes, 1 tablespoon of cumin, 1 tablespoon of coriander, 2 tablespoons of salt, and 2 tablespoons of pepper and cook for about 5 minutes.
Add 2 cups of chicken stock and bring to a boil.
Reduce heat to low, cover, and simmer for 1 1/2 hours.
