These traditional Cypriot zucchini fritters are made with fresh zucchini, parsley, and dill. They are perfect for a light lunch or snack. The zucchini is grated and combined with the herbs and then fried until golden brown. Serve with a dollop of yogurt or tzatziki for a delicious meal.
In a large bowl, combine the grated zucchini, parsley, and dill.
In a separate bowl, whisk together the flour, baking powder, and salt.
Add the flour mixture to the zucchini mixture and stir until combined.
Slowly add the olive oil and water, stirring until a thick batter is formed.
Heat a large skillet over medium heat and add enough oil to lightly coat the bottom.
Drop the batter by tablespoonfuls into the hot oil and fry until golden brown, about 2 minutes per side.
Drain on paper towels and serve warm.
