Place corned beef in large pot and cover with water. Bring to a boil, then reduce the heat to low and simmer for 2 1/2 hours, until the beef is tender.
Add the potatoes and carrots to the pot and simmer for 15 minutes, until the vegetables are almost done.
Add the cabbage to the pot and cook for an additional 15 minutes, until the cabbage is tender and the vegetables are fully cooked.
Slice the corned beef and serve it with the vegetables, with some of the cooking liquid on the side if desired.
