Next, heat a tablespoon of olive oil in a pan over medium heat.
Add the sliced onion and bell pepper to the pan and sauté until they are softened.
Add the shredded chicken, cumin, paprika, and salt to the pan and mix well.
Place a tortilla in a separate pan over medium heat.
Spread half of the chicken mixture onto the tortilla, then sprinkle half of the cheese on top.
Place another tortilla on top and press down gently with a spatula.
Cook for about 2-3 minutes, or until the cheese is melted and the bottom tortilla is crispy.
Flip the quesadilla and cook for another 2-3 minutes.
