                    In a large pot, heat oil over medium heat.

 Stir to combine and cook for 2 minutes.
 Add the vegetables and protein of your choice.
 Stir to combine, cover and cook for 20 minutes.
 Add the water and cook for an additional 10 minutes.
 Serve with rice or naan.
