Add the curry powder, cumin, coriander, turmeric, ginger, garlic, cardamom, cinnamon, black pepper and salt to the pot.
Stir to combine and cook for 2 minutes.
Add the vegetables and protein of your choice.
Stir to combine, cover and cook for 20 minutes.
Add the water and cook for an additional 10 minutes.
Serve with rice or naan.

In a large pot, heat 2 tablespoons of oil over medium heat.
Add the 3 tablespoons of curry powder, 1 tablespoon of ground cumin, 1 tablespoon of ground coriander, 1 tablespoon of turmeric, 1 tablespoon of ground ginger, 2 cloves of minced garlic, 1 teaspoon of ground cardamom, 1 teaspoon of ground cinnamon, 1 teaspoon of ground black pepper and 1 teaspoon of salt to the pot.
Stir to combine and cook for 2 minutes.
Add 2 cups of vegetables of your choice and 2 cups of protein of your choice and stir to combine.
Cover the pot and reduce the heat to low. Cook for 20 minutes.
Add 1 cup of water and cook for an additional 10 minutes.
Serve with rice or naan.
