Heat oil in a large pot over medium heat.
Add the beef and cook until browned.
Add the onion and garlic and cook for 3 minutes.
Add the tomatoes, cumin, coriander, ginger, nutmeg, cinnamon, salt, and pepper and cook for 5 minutes.
Add the beef broth and bring to a boil.
Reduce heat to low and simmer for 45 minutes.
Stir in the parsley and serve.

Add 1 chopped onion and 3 minced garlic cloves and cook for 3 minutes.
Add 1 can of diced tomatoes, 2 teaspoons of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground nutmeg, 1/4 teaspoon of ground cinnamon, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper and cook for 5 minutes.
Add 2 cups of beef broth and bring to a boil.

Stir in 1/4 cup of chopped fresh parsley and serve.
